I was going to give this 2 stars but changed it to 3 as I did find this book interesting and ok, although not for everyone. Before I saw this book, I had no clue what bitters were. Not only did this book let me know what they were, but how to make them and use them for different drinks and cocktails. Since most of society if now backing away from vices such as drinking and smoking, I feel this book is 30 years too late and would have been a better bargain and sold more copies if it was sold in the 1970's instead. This book is not for everyone as most of the recipes will take time to collect the ingredients and make on your own. I also felt this book would be an ideal "textbook" of sorts for a Mix-o-logy school for bartending. It is a true pity that the recipes called for alcohol and did not offer a non-alcoholic drink section. This would have been a saving grace for this book. I an all probability, I may find the time after retirement to try the methods in this book, but who knows, the way society is trending away from alcohol these days, it may no longer be an option when I retire.I was reimbursed for the cost of this book to provide an honest and truthful review.
This is good for getting your creative juices flowing - it gives you a basic template for making homemade bitters and gives you a long list of flavors to try. I also appreciated the "next step" discussions on where to venture on your own (e.g., making bitters out of nuts). Honestly, my own recipes were much better than the 4 recipes that I've tried from the book, but I learned something following those patterns.It's got some lazy editing points, that just seem sloppy. For example, it doesn't explain if the bark botanicals should be ground or chipped. That seems pretty important to discuss for newbies. The author is supposed to be some food blogger and you can find his website, but he didn't respond to my question about bark preparations.Another example...all of the recipes (except the tincture ones) follow the same pattern...mix ingredients into your booze base, let it sit for 3 weeks, shaking daily...strain and reserve booze liquid, boil and simmer ingredients in water...put the water and ingredients in a jar to wait a week...strain again, combine water and booze and a sweetener. This is even how it says to do chocolate bitters that use chocolate nibs in the ingredients. You know what happens when you boil nibs? Exactly...you end up with chocolate sludge that isn't straining or mixing in anything...so clearly either he didn't make any of these bitters or he didn't stop and customize based on the actual ingredients.
If you could have only one DIY bitters book, I'd have to recommend Parsons. It has more of the history and culture of bitters and cocktails, different recipes, and an appeal to more complex flavors.That said, this book offers an interesting and useful contrast. The recipes tend to be simpler - less subtle, perhaps, but possibly more approachable. If complex ingredients (or their cost) put you off, this makes a great alternative. Then, there's something to be said for the more direct approach to flavors - training one's palate a flavor or two at a time before leaping into elaborate blends of unfamiliar tastes can make a lot of sense. This also gives more attention to the "tincture" approach to bitters-blending: start with extracts of single flavorings and mix them, instead of throwing all the dry flavorings in one pot. Tinctures let you brew each flavoring a different amount of time, according to the needs of each ingredient, and make it possible to adjust the end product more easily. With the one-pot approach, the end product is already defined before you have a chance to see what it needs. Despite the advantages of tinctures, I still appreciate the ease of the one-pot recipes, so I like the fact that this offers both.As I said, if you could have only one book about making your bitters, this might not be first choice. But, if you're looking to expand your vision of the possibilities (and cocktails that use them), this makes a worthwhile addition to the library.-- wiredweird
Love this book. I have made many variations from the recipes and have also experimented. When people come over they are all interested in those small bottles in the refrigerator. I think the butters improve our cocktails. The cocktail recipes are fun to try but we pretty much just add them to the normal cocktails we typically drink.Add lime for anything with 7-up or spriteTry orange in an old fashioned or margarita.Grapefruit is exceptional in a gin/tonicI have guests experiment by making a cocktail of their choice and decanting it off into tasting glasses then put a row of bitters varieties in front of them and add a drop to each tasting glass. It is a lot of fun.
I have a lot of parties at home and love making cocktails and desserts to entertain my guests. This book was a perfect addition to my collection. I did not know before reading this book how essential bitters are in making a good cocktail. The first few pages explains you in detail about this and reading this book really helped me gain a much better idea of how to make some of really awesome cocktails.The recipes are simple yet interesting. Some were very nice and there were some which did not really hit my taste bud but I did get a lot of tips and tricks thanks to this book.Sample received for review.
This book would be a great gift for an aspiring mixologist. Craft cocktails are all the rage these days and a good cocktail definite cannot be without a good bitter to round it out. This book takes you through the basics of what goes into creating different bitters as well as how to incorporate them into different cocktails. This would be helpful to have even if you plan to buy different bitters to try with their cocktail recipes, but their recipes for the bitters are similarly easy to follow, provided you know where to procure bittering agents (orris root, horehound, wormwood, etc). It definitely makes you want to experiment with all different types of cocktails though, so proceed with caution I guess.
